A visit to ARCA is more than a meal; it’s a journey through the essence of Mexican cuisine, reimagined for the modern palate.
We recently headed to ARCA on our last trip to Tulum, find out what we thought in our full ARCA Tulum review.
Where
Located within the lush Tulum jungle along the busy beach road, ARCA Tulum Mexico offers an intimate escape from the usual beachfront dining spots. Surrounded by towering palm trees and lush greenery, the restaurant’s location feels remote and serene, despite being just minutes away from the bustling heart of Tulum’s tourist zone.
Address: Carr. Tulum-Boca Paila km 7.6,

Who
At the helm of ARCA is chef José Luis Hinostroza, whose impressive culinary journey has taken him through some of the most esteemed kitchens in the world. A native of California, Hinostroza honed his skills at Noma in Copenhagen, one of the world’s top restaurants, where he developed a deep appreciation for seasonal ingredients and innovative techniques.
His time at Noma profoundly influenced his cooking philosophy, inspiring him to combine contemporary, experimental methods with the rich traditions of Mexican cuisine.
At ARCA, Hinostroza’s focus is on showcasing the incredible local produce and flavors of the Yucatán Peninsula through his signature wood-fired cooking. His creativity, attention to detail, and respect for indigenous ingredients have earned him a reputation as one of Mexico’s most exciting chefs, with ARCA cementing its place as a leader in Tulum’s thriving dining scene.
Concept
At the core of ARCA is chef José Luis Hinostroza’s vision: to honor the local flavors of the Yucatán while introducing modern techniques and global influences. The restaurant’s menu is rooted in wood-fire cooking, giving every dish a smoky, elemental quality.
The open kitchen not only serves as the heart of the restaurant but also as a theater where diners can watch the chefs work magic with local ingredients. ARCA’s concept is all about celebrating Mexico’s culinary heritage, yet pushing it forward with bold, contemporary flavors.

First Impressions
The first thing that strikes you when you arrive at ARCA is the enchanting atmosphere. The open-air space, nestled within the jungle, feels rustic yet refined.
As you step through the unassuming entrance, you are immediately transported into a mystical world where the jungle becomes a part of the dining experience. The sounds of nature and the crackle of the wood-fired grill set the stage for an unforgettable meal.
The understated decor, with its natural materials and minimalistic design, lets the food and setting take center stage. You immediately know you’re in for something special.
Menu
The menu at ARCA is ever-changing, driven by the freshest local ingredients and the region’s seasonal bounty. It’s designed for sharing, encouraging diners to sample a variety of bold, wood-fired dishes that pay homage to the Yucatán Peninsula.
Every item on the menu is thoughtfully crafted, blending local traditions with modern culinary techniques.
Expect to see a good mix of fish, seafood, meat and local produce all tied together with traditional Mayan ingredients.
Vegetarians won’t be left out—dishes like the whole roasted squash and mushroom tlayudas showcase the natural sweetness and smokiness of local produce. Vegans may find fewer options, but there are still possibilities to enjoy a meal – it’s worth calling ahead to clarify.
A tasting menu is also available, even though the a la carte shines through.

Food
ARCA’s food is all about wood-fired cooking, bringing out the natural flavors of local ingredients with a touch of smoke.
We ordered the softshell crab taco, roasted prawns with morita chilli, stripped seabass with poblano and tomatillo mole and the roasted bone marrow with hoja santa. The crab taco was a lovely way to start the meal, a celebration of textures with a very subtle taste. The prawns were succulent and full of flavor while the bone marrow, served with perfectly crusty sourdough was rich and decadent.
The highlight of our meal however was the stripped seabass with green mole. The fish, cooked to perfection, the mole, a complex and heavier profile of flavor, lightened by the juicy jicama and coconut salad. The dish was truly phenomenal.
Each dish felt deeply connected to the Yucatán’s culinary traditions, yet we found it to be elevated by modern techniques that bring out bold flavors and textural contrasts.
Beverage
ARCA’s drink menu is as thoughtfully curated as the food, with a strong focus on mezcal, craft cocktails. El Solar is a crowd favorite, blending the smoky intensity of mezcal with the brightness of citrus. The Green Garden—a mix of gin, St Germain, and lemongrass pulque—offers a refreshing balance of tropical sweetness and bitterness.
The wine list leans heavily on Mexican wines, which we loved, expertly paired to complement the bold, smoky flavors of the dishes.

Atmosphere
ARCA restaurant’s atmosphere is a key part of the experience. The open-air dining room, lit by candlelight and the soft glow of the fire, feels intimate and magical, surrounded by the sights and sounds of the jungle. The rustic decor, with its raw wooden tables and simple design, allows the natural surroundings to take center stage.
Amid it all, copal burns in various corners adding to the rustic-yet-undeniably-Tulum-atmopshere. It’s a space that feels both earthy and refined, providing the perfect backdrop for the bold, elemental flavors of the food.
The service is friendly and attentive, striking the perfect balance between professionalism and warmth. The staff is knowledgeable and clearly passionate about the food, often chatting with guests about the menu, the ingredients, and the cooking techniques. It’s the kind of place where you feel genuinely cared for, without any pretension.
